The short answer, is that .net core isn't currently on the roadmap. The mono runtime and .net core runtime are pretty well optimized for their respective workloads (applications, particular mobile and server) and there would be significant integration work.
However, with netstandard libraries, it should be pretty trivial to share code between .net core and xamarin projects.
Is there a particular use case you are wondering about? Or are you just rightfully excited about .net core.

We would like to replace the Mono runtime with the .net core runtime in our Xamarin.Mac application .. and I was wondering if it's possible.

No, not without re-writing significant chunks of our runtime support code. I can point you in the right direction, but it'll be extremely non-trivial.
This would be a great proof of concept for the rest of Xamarin.Forms. Should be feasible as .Net Core runs on mac already. Performance and consolidated development would be great advantages of moving Xamarin from mono to .Net Core.

Part of that includes:
Produce a single .NET runtime and framework that can be used everywhere and that has uniform runtime behaviors and developer experiences.
What and how exactly that is going to work is still in planning, but we have absolutely heard people's feedback on the divided tooling/BCL/runtime between Xamarin and dotnet core.

That is a very good question - I don't know yet
Beyond that announcement, there isn't much else publicly stated.

As a general rule in Xamarin.Mac and iOS we try rather hard to prevent breaking API changes but sometimes behavioral changes do occur. Some change in the project format seems likely, but I really don't have anything concrete pinned down.

We're working through the implementation details right now, and I don't have too much to share yet.

Hi Chris!
In our company we are working on migrating our server codebase from the .net framework to .net core. Everything is going straightforward.
Now we're planning if/when we will migrate the GUI clients. There would be no problem with our Winforms/WPF (win), and Gtk# (linux) GUIs, since there are libraries for .net core.
But we have questions with our Xamarin.Mac client (macOS). Any update on Xamarin.Mac migrating to .net core or net-5? Do you have any news/progress/thoughts about the future of Xamarin.Mac migration?

Beyond a 'yes, we are planning/working .NET 5 support for both Xamarin.iOS and Xamarin.Mac', I'm not sure there is that much concrete to report. Work is ongoing, most of it focused on updating and cleaning up our msbuild right now.
Mac os 10.11 direct download. There are a lot of details on migration paths, integrations with the runtime, and such that are in discussion.
What I can assume you is that Xamarin.Mac is planning on joining Xamarin.iOS in this brave new .NET 5 world and we are investing right now on making that real.

If you want to build the WebWindow library itself, you will need:

Windows, Mac, or Linux
Node.js (because WebWindow.Blazor.JS includes TypeScript code, so the build process involves calling Node to perform a Webpack build)
If you're on Windows:
- Use Visual Studio with C++ support enabled. You must build in x64 configuration (not AnyCPU, which is the default).
- If things don't seem to be updating, try right-clicking one of the testassets projects and choose Rebuild to force it to rebuild the native assets.
If you're on macOS:
- Install Xcode so that you have the whole gcc toolchain available on the command line.
- From the repo root, run dotnet build src/WebWindow/WebWindow.csproj
- Then you can cd testassets/HelloWorldApp and dotnet run
If you're on Linux (tested with Ubuntu 18.04):
- Install dependencies: sudo apt-get update && sudo apt-get
